Chipotle Caesar Potato Salad

||Renee’s® Chipotle Caesar Dressing
||Each salt and freshly ground pepper
||Mini red potatoes, scrubbed and halved, quartered if large
||Chopped fresh chives
- In large skillet, heat oil over medium heat; cook onions, mustard seeds, salt and pepper, stirring occasionally, for 10 to 15 minutes or until soft and golden. Reduce heat to medium-low; continue to cook onions, stirring often, for 10 minutes or golden and caramelized. Cool completely.
- Meanwhile, cook potatoes in boiling salted water, for 15 to 20 minutes or until fork-tender; drain well. While still warm, toss with 1/4 cup of the dressing in large bowl.
- Meanwhile, cook beans in boiling salted water for 4 to 5 minutes or until tender-crisp. Drain and refresh under cold water; drain well.
- Add onions and beans to potatoes in bowl, toss with remaining dressing.
||If desired, top with crumbled crispy bacon.
