Chipotle Caesar Potato Salad

1/2 cup Renee’s® Chipotle Caesar Dressing

1 tbsp Olive oil

2 Onions, sliced

2 tsp Mustard seeds

1/4 tsp Each salt and freshly ground pepper

2 lb Mini red potatoes, scrubbed and halved, quartered if large

1/2 lb Green beans

2 tbsp Chopped fresh chives


  1. In large skillet, heat oil over medium heat; cook onions, mustard seeds, salt and pepper, stirring occasionally, for 10 to 15 minutes or until soft and golden. Reduce heat to medium-low; continue to cook onions, stirring often, for 10 minutes or golden and caramelized. Cool completely.
  2. Meanwhile, cook potatoes in boiling salted water, for 15 to 20 minutes or until fork-tender; drain well. While still warm, toss with 1/4 cup of the dressing in large bowl.
  3. Meanwhile, cook beans in boiling salted water for 4 to 5 minutes or until tender-crisp. Drain and refresh under cold water; drain well.
  4. Add onions and beans to potatoes in bowl, toss with remaining dressing.

TIP If desired, top with crumbled crispy bacon.
